I don't think distillation should be on-topic, btw. But if someone makes wine and beer, how can mead and champagne be out? Then there are more exotic things such as kvass. Maybe their tags wouldn't have a huge volume, but off-topic? What would SO be if only C# and Java were on-topic? Some kinds of wine in Europe are even less known than most exotic beverages. – 0010001000011101 Jun 5 '10 at 2:06

That's a difficult one. Recipes could overwhelm the site... but it's also weird to imagine a go-to reference for homebrewing where you couldn't even get a solid IPA recipe. – Matt Parker Jun 2 '10 at 1:38

I think early on, you allow these type of questions that the community embraces, as long as they're not the type that dilute the site or start arguments. Then, once you have solid critical mass, you can pare back anything that threatens to over wiki-fy the site. – Jaydles Jun 2 '10 at 12:57

I agree with Matt Parker this one is tough. The problem with recipes is there is no "correct" answer. They are very subjective. For voting to mean anything people would have to actually brew and taste each recipe... I'm going with "off-topic" for recipes but "on-topic" for recipe tweaks for flavor, head retention, etc. – Jerry Fernholz Jun 4 '10 at 15:54
